Roy Shilkrot 9a6065bea6 refactor: Replace stenographer with AWS Transcribe in code 
- Replace the stenographer module with the AWS Transcribe module in the codebase.
- Update relevant file paths and function names accordingly.
- Remove unused stenographer-related code and properties.
