feat: update IPTF mastermap with Q1 results and Q2 roadmap

Mark Q1 milestones as completed (7 PoCs, map v0.3.0, 10 blog posts,
3 workshops) and add Q2 roadmap: guide v0 web product, new PoCs,
end-user privacy protections, expanded institutional engagement.
Add details and KPIs sections.
