feat(data): implement Viem lib alternative to SemaphoreEthers (#966 )
* feat(data): implement Viem lib alternative to Ethers for @semaphore-protocol/data package class This adds a Viem-based alternative to SemaphoreEthers, allowing developers to choose their preferred Ethereum library.
